Williams & Humbert comenzó en el año 2001 a trabajar en la línea de las añadas de crianza biológica. Fruto de este trabajo fue el Fino 2006, el primer fino de añada del Marco de Jerez. En estas añadas, el mosto seleccionado se alcoholiza a 15º, sin que se intervenga en este vino, el cual desarrolla de forma espontánea el velo de flor comenzando así la crianza biológica. El resultado de esta crianza da lugar a nuestra colección de Finos de añada. Y, con el tiempo, a los amontillados de añada, al ser estos últimos vinos fruto de la crianza biológica y oxidativa. El Amontillado de añada 2003, lanzado al mercado, es el único en su categoría en el Marco de Jerez.
